Crunchy Parmesan Potatoes
Ingredients
1/2 cup powdered Parmesan cheese
1/2 cup panko breadcrumbs
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
1/2 teaspoon smoked paprika
1/2 teaspoon dried basil
3/4 teaspoon salt
3/4 teaspoon freshly ground black pepper
3 tablespoons olive oil
1 1/2 pounds baby potatoes, purple or gold
Fresh parsley, to serve (optional)
1/2 cup panko breadcrumbs

Directions
1. Preheat oven to 400 degrees Fahrenheit.
2. Mix Parmesan cheese, panko breadcrumbs and spices (garlic powder through pepper) in a bowl. Apply a thin, even layer of olive oil on the bottom of a 9-by-13-inch baking dish.
3. Pour the cheese mixture on the bottom of the baking dish. Spread it evenly to coat the entire pan, being careful not to create clumps.
4. Wash and cut potatoes in half. Place them flat side down on the cheese mixture. Bake 30 to 40 minutes, depending on the size of the potatoes or until the cheese starts to brown. Make sure that the potatoes are cooked through by carefully piercing them with a fork.
