If the kids' way of thanking you for dinner is asking how many more bites they have to take, you're probably looking for a dish the kids will devour without complaint. This comfort food-inspired dish by Mister Cooking Panda is tasty. As an added bonus it has veggies (shhh!), and it's easy to prep.
Grab a bag of frozen veggies and a few other ingredients and head to the kitchen for a quick dinner designed to please the pickiest eater! Let's prepare this scrumptious chicken cornbread casserole.

For a very similar take on this recipe, Betty Crocker recommends combining 3 cups of cooked, diced chicken breast, 1 teaspoon chicken seasoning, 1/4 teaspoon garlic powder, 1 1/2 cups sour cream and 1 cup of milk in a bowl. Mix well. Add cheese and green onions and spread the mixture into a greased casserole dish. (If you are using a bag of mixed veggies, add it to the mixture before putting in the dish).
The video from Cooking Panda starts out a bit different. In a heated pan, add 1/3 cup of butter, 1/4 cup of onions and a bag of mixed veggies. Let the vegetables cook until a bit soft. Then add 1/3 cup of flour and 1 1/4 cup of chicken stock. Mix and allow to simmer. Add milk and chicken. Allow to thicken before pouring mixture into a casserole dish.
Next, you'll add the prepared cornbread mix (any brand will do) to the top of the mixture. Bake on 400 for about 30 minutes. Both recipes result in a tasty dish that's chocked full of healthy veggies.
