French toast is one of my favorite ultimate comfort foods. I associate French toast with lazy Saturday mornings when you stay in your pajamas for way too long. As kids, whenever Mom made French toast, we knew it was going to be the start of a fun weekend.
I love this blueberry French toast casserole because it's both delicious and easy to make. It takes only 5 minutes to prepare, and then you throw it in the oven and wait for the casserole to be finished. For an extra treat, after baking, pour maple syrup over the top!
Blueberry French Toast CasserolePreparation time: 5 minutes
Total time: 40 minutes
Servings: 6 to 8
Ingredients6 to 8 slices whole-wheat or white bread (6 cups when diced; can also use old bread)
1 cup fresh or frozen blueberries
4 eggs
1 1/4 cups milk
1/4 cup brown sugar, divided
1/4 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon cinnamon
Directions1. Preheat oven to 400 degrees Fahrenheit.
2. Cut bread into small pieces.
3. Line the bottom of an 8-by-8-inch casserole dish with the cut-up bread.
4. Sprinkle blueberries on top of the bread.
5. In a bowl, mix eggs, milk, 2 tablespoons brown sugar, salt and vanilla. Pour mixture over bread.
6. Carefully mix everything together in the casserole dish.
7. Sprinkle remaining 2 tablespoons brown sugar and cinnamon on top.
8. Bake for 35 minutes.
9. Serve.
Pro tip 1: Add maple syrup on top once served.
Pro tip 2: If you don't enjoy the taste of whole-wheat bread, feel free to substitute for any bread of your liking.
